Owners Joan and Nick Caggiano use only the finest ingredients and bake their products the old- fashioned way. Over the years, Nick Jr. has become his parents' right-hand man. The family-owned and operated business takes great pride in offering the freshest and finest quality possible. The casual, friendly atmosphere is a trademark of the establishment. In fact, Nicola Pizza has been defined as the best pizza in the east. Loyal cus- tomers return again and again for the personalized service and attention to detail that is obvious upon each visit. The hearth brick oven imparts the unique flavor of Nicola Pizza. Whether for takeout, dine-in or delivery, patrons can be assured of the quality of the food and service. Nicola's blends three different kinds of cheeses and uses homemade sauce from plum tomatoes to create its pizza. All of the dough at Nicola Pizza is fat free. Besides the traditional tomato sauce and !cheese pizza, Nicola's also features its own family recipe white pizza, made with seasoned white sauce, dough and pizza cheese. What really put Nicola on themap was the Nic- O-Boli, introduced in 1975. A home-baked concoc- tion that usually contains ground beef, Nicola's fat- free pizza sauce and a blend of cheeses, the Nic-O- Boli is rolled in fat-free dough and baked in the oven. Just like its famous pizza counterpart, the Nic-O-Boli can include a variety of different extras (pepperoni, mushroom, sausage, sweet pepper, extra cheese and onion, just to name a few), and may also be made without meat. The Nic-O-Boli is so popular that the establish- ment added the Nic-Spin-Oli (with sauce, spinach and cheese) and the Nic-E-Bolito (with chicken, let- tuce tomatoes, jalepefio peppers and cheese). Nicola's is also noted for its pasta with Mama Nicola's Sugo sauce (a registered trademark home- made spaghetti sauce). Pasta dishes include not only spaghetti, but also baked ziti and stuffed shells, too. Nicola's spaghetti and meatballs are now avail- able in Pasta Pails, which include five servings of spaghetti and meatballs or chicken filets with home- made rolls. The Gift Pasta Pail includes three 16- ounce jars of Sugo sauce, spaghetti noodles, spaghetti server and a red-and-white checkered tow- el. The sandwich menu at Nicola Pizza includes meatball, chicken parmesan, tuna melt and sausage sandwiches, with a variety of different salads and soups available as well.
