Po'boys Creole and Fresh Catch reopens with a 'meat and greet' preview Mike Clampitt, new owner of the familiar Po' Boys in Milton, invited the community for a pig roast ]an. 9. Having worked in popular area restaurants most of his life and most recently as executive chef at Baywood Greens for 10 years, he was ready to step up to be the owner of his own 30-seat restaurant. His advisor at the University of Delaware's Small Business Development Center connected him with Lee and Amy Stewart, who were looking for someone to take over the restaurant with the same mind-set - keep the concept and respect the loyal customers. Clampitt plans to keep the menu as is and will eventually add spe- cial items to the regular menu. Having closed for a holiday break and renovations, Clampitt reopened the restaurant officially ]an. 10, the day after a community party which included a whole roasted pig, gumbo, collards, black-eyed peas and cornbread. He and his staff served 350 peo- ple. He is keeping the staff, who he calls the face of Po' Boys. "I know what works. They've done everything right; that's why I'm keeping it as is," he said. Located on Route 16 and Palm- er Street in Milton, Po' Boys is open 11 a.m. to 9 p.m., Wednesday through Sunday, with a special Sunday Brunch menu. Mark Gray helps out carving the roasted pig.
