Check out the Tijuana ,axi t authentic Mexican fare at reasona[ " Rehoboth Beach's first and only authentic Mexi- can restaurant, the Tijuana Taxii, keeps its customers coming back for more with iits authentic, made- from-scratch dishes, reasonablte prices and friendly service. Proprietor Joann Wallett hats owned the friendly cantina for eight years, and hms gained a loyal and growing clientele of locals and visitors in that time span. With the winter season cormes the return of the establishment's popular hallf-priee fajitas night (steak, chicken, shrimp, portabella mushroom or combination of any two) every' Wednesday night. The Taxi's Mexican fare is accompanied by a full slate of appetizers. Nachos (offered in four different varieties, from "Plain Jane" nachos with just cheese and salsa to "serious Taxi" nachos with the works), black bean vegetable chili, mita quesadilla (barbe- cued and pulled-pork fajita o,nions, green peppers and jack cheese) are all featured under the appetizer heading. You'll find the portions are sometimes a meal in themselves. The quesadilla pifiata (spicy chicken, jack cheese, onions, black olives and jalapefios and topped with guacamole and sour cream) or the Mayan quesedilla (jack cheese, spinach, black beans and onions, served in a warm flour tortilla and topped with Chipotle mayonnaise) are also best bets at the Taxi. Dinners, which come in lmore-than-ample por- tions complete with Mexican ]rice and refried beans or a salad, are many and varied. The original "Car- men Miranda" (grilled chicken breasts with bananas and a spicy-sweet salsa with raisins served in a warm flour tortilla) still reigns supreme. Tijuana Taxi even has special, delicious dishes for its vegetarian patrons. The chimichanga vege- tarian (spinach, black beans, chili, jack cheese and lettuce), vegetarian combo (a spicy spinach enchila- da, burrito and a bean and cheese tostado served with rice and black beans), and vegetarian burritos (jaclccheese, spinach, black beans, chili, lettuce and tomatoes topped with tomatillo salsa and sour cream) are among tasty favorites customers rave about. Chimichangas, chicken mo16, the Taxi mixed grill, Chicken Mambo (Jamaican "jerk" chicken, secret spices - peppery and hot -served with black beans and rice, fried bananas and sour cream) along with a variety of fajitas, burritos, enchiladas and tacos, round out the dinner menu. Don't forget to add even more flavor to your meal at the Taxi with one of the establishment's great margaritas. Served in a spectrum of delicious flavors and a variety of sizes, their margaritas - whether frozen, straight up or on the rocks - are considered by many to be the best.
