Besides the traditional tomato sauce and cheese pizza, Nicola's also features its own family recipe white pizza, made with seasoned white sauce, dough and pizza cheese. What really put Nicola on the map was the Nic- O-Boli, introduced in 1975. A home-baked concoc- tion that usually contains ground beef, Nicola's fat- be made without meat. The Nic-O-Boli is so popular that the establish- ment added the Nic-Spin-Oli (with sauce, spinach and cheese) and the Nic-E-Bolito (with chicken, let- tuce tomatoes, jalepefio peppers and cheese). Nicola's is also noted for its pasta with Mama Nicola's Sugo sauce (a registered trademark home- made spaghetti sauce). Pasta dishes include not only spaghetti, but baked ziti and stuffed shells, too. Nicola's spaghetti and meatballs are now available in Pasta Pails, which include five servings of spaghetti and meatballs or chicken fillets with homemade rolls. The Gift Pasta Pail includes three 16-ounce jars of Sugo sauce, spaghetti noodles, spaghetti server and a red-and-white-checkered tow- el. The sandwich menu at Nicola Pizza includes meatball, chicken parmesan, tuna melt and sausage sandwiches, with a variety of different salads and soups available as well.
