74 - CAPE GAZETTE, Friday, May U - May 17, 2001 Redfin Seafood Grill & Market poised for spring opening By Jen Ellingsworth A new restaurant will make a splash in the Cape Region this spring when Redfin Seafood Grill & Market opens on Route 1, north Bethany. The latest creation from the owners of Third Edition restaurants in Washington, D.C. and Rehoboth Beach, Redfin will open in late May at the former site of the Luna Tuna Caf6. Partners Matthew Haley and Gregory L. Talcott, both of the Third Edition, along with Redfin manager Bryolly Zeigler and chef Cyrus Keefer, are combining cre- ative energies to debut a casual, yet sophisticated, seafood eatery overlooking the Salt Pond in Bethany. Framed by picturesque wetlands, Redfin features a spa- cious waterfront deck and an in- side dining room with prime views of the surrounding habitat. "We've pulled the best from the area," said Haley, also executive chef. "That includes the atmos- phere and cuisine. We're offering classic dishes that are simple with a sheik touch. Our menu is based on quality. It's always been im- portant to us to make our cus- tomers happy and keep them com- ing back for more." Redfin's menu includes several tried-and-true items with new twists, including starters such as whole Walden mountain smoked trout with mustard cream and toast points, and a jumbo chilled seafood platter. Keefer, a Harrisburg, Pa. native who now calls Bethany his home, will join Haley at the head of the Redfin kitchen staff. Then, you can add your own sides." Along with its extensive offer- ing of fresh seafood dishes, Redfin will also offer beef and poultry selections on its lunch and dinner menus. Creative sandwich inventions join an array of salads and an assortment of appetizers, in portions generous enough to encourage sharing. A comprehen- sive wine list was tailored with af- fordability in mind, agreed the management, and-Redfin's signa- ture house cocktail will be the. Bermuda classic, Dark & Stormy, a blend of Pusser's dark rum and ginger beer. Using fresh produce from local purveyors Tomato Sunshine, Ha- ley said he and the staff will create daily specials based on what veg- etables are in season. A portion in the t'ront of the restaurant will be the Comfort Inn on Route 1 in Re- hoboth Beach, from 11 a.m. to 7 p.m., Monday and Tuesday, May 14-15, to offer their expertise in various valuables and collectibles. With them will be a gemologist from Pennsylvania, a certified an- tique appraiser from Baltimore, a fourth-generation jeweler and sil- versmith from Boca Raton, Fla., and a world renowned art and an- tique dealer from Maryland. Oysters, lobsters and clam bakes to go are just a few items Haley said Redfin will offer at its market, Sauces and mari- nades will also be sold at the fish market, as will fresh produce items, including tomatoes and corn. Redfin's casual ambiance is complemented by a simple, clean approach to decor, including stainless steel accents and black leather and cherry wood booths in the dining room. "It's not going t'o be loud and cluttered," said Zeigler, who said the restaurant will feature a hint of the nautical touch. "We really wanted it to have an old-time feel that is inviting and friendly." Talcott said the decor will ideal- ly complement the cuisine of Redfin, in that it will be comfort- able, casual and friendly. "We came in here and decided, piece by piece, what we wanted tO place where," he said. "From the hardwood floors to the tile floors and custom booths, it just all came together."
