CAPE GAZETTE, Friday, June 26 - July 2, 1998 - 65 Aquatic food innovations topic at CMS July 21.22 The University of Delaware College of Marine Studies in Lewes will host a conference, "Aquatic Food Innovations," July 21-22. The conference is cosponsored by the Northeast Regional Aqua- culture Center, University of Delaware Sea Grant College Pro- gram, University of Maryland Eastern Shore Sea Grant Coopera- tive Extension Program and Maryland Department of Agricul- ture's Seafood Marketing Pro- gram. The program will be held at the Virden Center and College of Ma- rine Studies, Pilottown Road, Lewes. This two-day educational pro- gram is designed especially for food and nutrition educators, home economists, extension agents, food service managers, nutritionists and dietitians. Here's a dish you can keep in your freezer: Cortez Fish Cakes 2 qts water 2 1/2 lb. fresh tuna fillet, cut into chunks 1 lb. small Yukon gold pota- toes, peeled and cut into 1/2- inch cubes 2 T unsalted butter, divided I small onion, diced 4 to 6 pepperoncini, diced 1 T dried oregano I t dried thyme I t salt 1/4 t freshly ground pepper 1 T lemon juice 2 large eggs, slightly beaten 1 1/2 cups soft bread crumbs Vegetable oil Fresh Italian parsley sprigs as garnish Bring 2 quarts water to a boil in a Dutch oven; add fish. Cover, re- duce heat and simmer 5 to 7 min- utes or until fish flakes with a fork. Drain. Remove and discard any skin or bones from fish and flake. Set aside. Cook potatoes in boiling water to cover in Dutch oven 20 minutes or until tender; drain and return to Dutch oven. Add 1 T butter. Mash with potato masher until smooth; cool. Melt remaining 1 T butter in a large Skillet; add onion and pep- peroncini and saut6 3 to 5 min- utes. Stir in oregano and next four ingredients. Stir mixture into mashed potatoes. Fold in fish and eggs. Shape into 24, 2-inch patties. Dredge in bread crumbs, and place on a baking sheet. Cover and chill 2 hours. Pour oil to a depth of I inch into a Dutch oven; heat to 350 F. Fry 4 fish cakes at a time, 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Yield: 24 appetizers. Next week: pasta. What did the hungry cook say to the pot of pas- ta?
