Chez La Mer is a gem of a restaurant in downtown Rehoboth Beach Inspired by her visits to the south of France i n the late '70s, Chez La Mer proprietor Nancy Wolfe' decided that Provence would be the focus of the ambience and cuisine of the upscale dining estab- lishment. Opened almost two decades ago at the corner of Second Street and Wilmington Avenue in Rehoboth Beach, Chez La Mer maintains its sterling reputa- tion for award-winning atmosphere, service and cui- sine. Concentrating on flavor and presentation, Chez La Mer boasts Continental French cuisine, with a strong emphasis on regional seafood. Consistency is one of the restaurant's trademarks. Head Chef Ellen Mackenzie has been with Chez La Mer for 11 years and brings extensive knowledge and expertise to the menu, which changes on a sea- sonal basis. Special dietary requests can be easily accommodated. Currently featured under the appetizer heading are scallops wrapped in salmon, grilled and served with steamed spinach and an herb beurre blanc. Salmon and roasted red pepper soup and onion and mushroom soup with herbs Provenqal are also fea- tured. A salad of spinach, roasted beets and oranges with a pecan vinaigrette is also a highlight of Chez La Mer's revered menu. EntrEe selections that await a visit to the restau- rant include fillet of Black Angus beef, wrapped in puff pastry with rosemary and bacon and served With sauce Bordelaise and roastedpotatoes, and sauteed fillet of halibut with port wine, plum toma- toes and fresh oregano, served with angel-hair pasta. Medallions of thinly pounded veal, sauteed and prepared "Saltimbocca"-style with fresh sage, pro- sciutto and Madeira and served with parmesan orzo, isn't to be overlooked, either. Offered nightly from Monday to Thursday at Chez La Mer is a whole, 1 1/2-pound lobster dinner for a mere $20. To complement your dining experience, Chez La Mer has more than 40 fabulous wines priced at $25 or less on its extensive, award-winning wine list. The restaurant has received an Award of Excellence from "Wine Spectator" magazine every year since 1993. Chez La Mer's slate of dessert specialties is unequaled.
