Explore th( attributes of coffee, and tea at the Coffee Mill in Rehoboth Beach Coffee Mill owner Steve Webster hopes that along with its upbeat atmosphere, his establishment can offer something more to its patrons. Webster said he'd like his customers to leave with a better understanding about coffee and its many attributes. The primary misconception about coffee, he said, is that it has more caffeine than is found in cap- puccino or espresso. When brewing espresso, the forced pressure and high heat (160 degrees) used in such a short time (about 14 seconds) keeps the flavor and caffeine, he said. Regular perked coffee (in conventional drip machines) takes longer to brew (at least 60 seconds) and usually sits for a more lengthy period of time. During that time, much of its original caffeine is absorbed. Webster, who is co-owner of the Coffee Mill with Wayne LeMon, said a good way to satisfy your caffeine craving is to order a "Red-Eye Coffee," a shot of espresso in a regular coffee. Espresso is a dark Italian roast ground fine and made in a machine with a pressurized boiler tank. Hot water is forced through the roast in the process, which takes about 14 seconds. The result is the rich product, which was first beloved throughout Europe and now the United States. Stove-top espresso machines, which are still used, have giveh way to bigger, more expensive machines used. in restau- rants and at home. Those who are faint of heart may choose a latt6. (one part espresso and,three parts steamed milk), while die-hard coffee drinkers may choose to enjoy a cappuccino (one part espresso and two parts froth). Another fun and popular way to enjoy a cof- fee is with a flavored syrup. Webster said the Cof- fee Mill's got at least 30 different flavors in stock to choose from, including hazelnut and amaretto. Kids don't have to be left out of the fun, either. The younger set can enjoy a "steamer," a combina- tion of frothed milk and syrup. Great coffee doesn't have to be a big hassle, either. A good way to make coffee at home, said Webster, is with a French Press. The process is extremely simply, and the result is a fresh tasting, pure product, Coarsely-ground coffee is inserted into the press, and an equal amount of boiling water added. The user then presses down on the device to force the water through the coffee. What's left is a grind-free beverage guaranteed to please the dis- cerning coffee lover's palate. The Coffee Mill is the place to find an extensive array of organic coffee, in which no chemicals or pesticides have been used. Although coffee is magnificent in its own right, Webster said tea is not to be ignored for both taste and nutritional value. Black and green teas are chock-full of antioxidants. The best way to enjoy a cup of tasteful tea is to use loose tea leaves and steep tea in a tea ball. Web- ster said not much tea is needed for the process. A small amount of tea can be used because the leaves will expand during the process, An array of teas are featured at the Coffee Mill, including loose tea and tea bags.
