DOwnstate Master Food Educator training set Master Food Educator training is for individuals interested in nutri- tion, food safety, food selection and issue s facing Consumers today. The University of Delaware Cooperative Extension is offering a Master Food Educator from 9:_30 a.m. to 3 p.m., Tuesdays, Oct. 6 - Nov. 10. The workshops will be in Dover for both Kent and Sussex counties. The program offers volunteers 30 hours of intensive and comprehensive nu- trition training over a five-week period. Instructors are University of Delaware Cooperative Extension specialists, faculty and industry ex- perts. Upon completion, Master Food Educators are expected to donate 40 hours of time to help the University of Delaware Cooperative Exten- sion expand nutrition and food safety awareness. The course is intensive and comprehensive training. Volunteer activities may include preparing or manning educational displays, giving presentations or demonstra- tions, and/or writing news releases and fact sheets. For those who would like to use the information for themselves, the cost is $75. For details or to register, call 856-7303. Wine Continued from page 61 from Chenin Blanc grapes. These are more acidic than the S6millon, Sauvignon Blanc and Muscadelle, which are blended for Sauternes. The result is a lighter and grace- ful wine when young, and a fresh- er, crisper wine as it ages. Some of these wines are still vital after 80 years in the bottle. Vouvray is the best known of the Loire Val- ley wines. The best recent vintage was 1989; 1988, 1990 and 1996 are also terrific. Another nice dessert wine that is unique is Eiswein (ice wine). These wines achieve their concen- tration in a totally different way. Originally, Eiswein was produced in Germany. The story is a sur- prise killing frost swept through the German wine-growing region one night just before harvest. The grapes were frozen and split open. The following morning as the sun warmed the area, the grapes thawed and the water inside ran off. Some enterprising winemaker decided to go ahead and produce wine from these grapes. While the winemaker's name has been lost to history, his dis- covery became known wherever early frost is a danger. In fact, this process had concentrated the must, or grape juice, as botrytis would without the unpleasant task of removing the mold or the possi- bility of contamination of the wine. The only problem was getting the cooperation of the weather. As you realize, modem day freezing techniques have solved the prob- lem. I recommend Bonny Doon Vineyard Orange Muscat de Vin Glaciere by our old friend Randall Grahm, the original Rho'ne Ranger. Unfortunately, there is a prob- lem with these wines. The intense concentration of the must results in much lower yield and a resul- tant higher price. A first growth Vouvray Moelleux (moelleux dis- tinguishes sweet from dry) costs about $50 to $60 per bottle, and the Eiswein around $35 to $40. While I realize that may sound pricey to some, I truly believe it is worth the experience. People prefer local honey, and the association will ex- amine ways to excite interest in Sussex honey to make more sales. Honey, like wine, varies in col- or, smell and taste from region to region and year to year. Most Sus- sex honey is somewhat wild and reflects the "bouquet" of the wild cherry, tulip poplar and maple - upon which the bees feed - rather than the mere "clover" of the gro- cery store honey brought in from the Midwest. The association is composed of everyone in between. The meeting is open to the public and refresh- ments will be offered.
