CAPE GAZETTE, Friday, December 19 - December 25, 1997 - 57 An easy boneless roast and herb pilaf fit the holiday bill Holiday meals demand some special foods to serve to family and friends. However, the special menu need not be tedious or hard to prepare. Here's a winning solution. Pre- pare a boneless roast that comes with a consumer-friendly pop-up timer. This will allow you not to worry about when the roast is done, the timer will pop up when it's cooked just right. Nut Pilaf 1 T butter I medium onion, finely chopped mushrooms 3/4 C eoarsdy chopped t pecans* 1 T chopped fresh yme or I t dried thyme t/2 t salt " I/4 t ground black pepper Heat butter in large Skillet over medium-high heat until hot. Add onion, mushrooms and garlic. Cook and stir 3to 5 minutes or until Makes 6 servings. Yorkshire pudding and horse- radish sauce are age-old favorites as go-alongs with roast beef. And, both recipes can be mixed up the day before. A holiday herb and nut pilaf and green vegetable are all that are needed to round out this easy to make feast. 5-6 lb. boneless, rolled beef roast with pop-up timer 6 large eggs 1 t salt 2 C all-purpose flour 2 C cold milk 1/4 C beef fat The night before roasting the beef roast prepare the ingredients for the Yorkshire pudding by combining the eggs, salt, flour and milk in a blender. Blend until mix- ture is smooth. Cover and refriger- ate until ready to bake. The next day prepare the roast beef according to package direc- tions. When the roast is removed from the oven increase the oven temperature to 450 F. Heat the beef fat in an oblong roasting pan two to three minutes. Pour the cold batter into the hot fat and bake for 15 minutes. Reduce heat to 350 F and continue to bake 15 to 20 minutes. The pudding should be well risen, puffy, crisp and brown on top and bottom. Slice into squares and serve hot, straight from the pan in which it was baked. Horseradish Sauce (Makes about 1 C) heavy cream 1/2 C cream style horseradish 1/2 t dry mustard 1/2 t salt 1/2 t white pepper Whip the cream to stiff peaks, and fold in the horseradish, mus- tard, salt and pepper.
