There are easy alterna- tives to spending your whole day cooking. Here's a quick-and-easy dinner casserole that serves six people, Resolutions Continued from page 48 vor boost by honey, without being overly sweet. And, of course, hon- ey's at home in desserts like hon- ey bread pudding, an easy, low-fat flay to end any meal without guilt. From New Year's Day, to Easter, to Mother's Day, brunch is a spe- cial time to indulge a little. And dishes made with honey are a sweet way to indulge without breaking your healthy resolutions. Makes four servings; 2 cups sal- ad each. 6 oz. pasta, small tube shape 2 C fresh spinach, torn 2 C halved cherry tomatoes 1-1/2 C frozen peas, thawed 1/2 C pistachio nuts, shelled 2 T honey 2-1/2 T Dijon mustard 3 T red wine vinegar 1 egg white 1-1/2 t oregano, crumbled 1/2 t garlic powder Thaw peas quickly by placing in from the recipe fiie of Emma Ellingsworth: Chicken Casserole 1/4 lb. sliced fresh mushrooms (or one 4-ounce can) 1 T butter a sieve and rinsing with hot water. Drop pasta into boiling water; re- turn to boil. Cook 10 or 15 min- utcs or until tender. Drain. Toss pasta, spinach, tomatoes, peas, pistachios and dressing (see be- low) in large bowl. Dressing: Combine 2 T honey, 2-1/2 T Dijon mustard, 3 T red wine vinegar, 1 egg white, l-I/2 t dried oregano (crumbled) and I/2 t garlic powder. Makes 1/2 cup. Note: suggested pasta - penne, mostaccioli, rigatoni. Honey Bread Dessert 8 C day-old egg bread, cubed 3 C milk 1 C half-and-half 6 eggs, beaten 1/2 C honey 1 T grated orange peel 1 teach vanilla and ground cinnamon honey cream sauce Arrange bread in bottom of lightly greased shallow 2-quart baking dish. Beat remaining in- gredients until well blended; pour over bread cubes in baking dish and let stand one hour or until liq- 3 C cut-up, cooked chicken 3 C soft bread crumbs 1 C milk 1 C chicken broth 1/4 C finely chopped pimentos 2 eggs, beaten 2 T minced onion Honey bread dessert is a sweet treat. uid is absorbed by bread. Bake at 375 F 45 to 50 minutes or until knife inserted near center comes Qut clean. Makes 8 to 12 servings. Honey cream sauce: Beat 1 cup whipping cream until fluffy; add 1/4 cup honey slowly and beat until stiff. Fold in 1 tablespoon rum. Makes about 2 cups. Heat oven to 350 de- grees. Saut6 mushrooms in butter. Mix with rest of ingredi- ents. Pour in- to greased, two-quart baking dish. ELLINGSWORTH Set in a pan of water (one inch deep). Bake for one-and-a-half hours. For dessert, here's another speedy dish you can whip up in no time: Quick Peach Pie 1 can peaches (29-ounce size) 1 stick of butter or margarine Dash of vanilla 1 C self-rising flour 1 C sugar 1 C milk Melt butter in 9- by 13- by 2- inch pan. Pour peaches and syrup over butter. Beat flour, sugar, vanilla and milk together. Pour evenly over peaches. Bake 30-35 minutes at 425 degrees or until golden brown. May be served hot or cold.
